What you'll need:
- Knife
- Cutting board
- Sauce pan
- Potato masher, food processor, or blender
- Measuring cups and spoons
- Mixing spoon
Ingredients
- 1 large head cauliflower, chopped into bite sized pieces - about 2 pounds (for fun and color try purple cauliflower)
- 1/2 cup chicken stock (may need more)
- 2 tablespoons roasted garlic or finely chopped regular garlic
- Kosher salt and freshly ground black pepper
- 1/4 cup milk
- 1/2 cup shredded sharp Cheddar
- 1/4 cup reduced fat sour cream
- 2 tablespoons chopped chives
Directions
- Add the cauliflower and stock to a medium sized saucepan.
- Bring to a simmer over medium-high heat and cook until tender. This will take about 8 to 10 minutes.
- Add the roasted garlic and season with salt and pepper to taste.
- Stir in the milk and puree with an immersion blender or food processor or potato masher until smooth.
- Mix in the cheese and sour cream for seasoning. Transfer the mixture to a serving bowl and then garnish with the shopped chives.
