What you'll need
- Knife and Cutting board OR food processor
- Measuring cups and spoons
- Muffin tin (preferably a mini one)
- Mixing bowl
Ingredients
- 3 cups of shredded cauliflower
- 1 cup of shredded sharp cheddar cheese (try using a reduced fat cheese)
- 1 egg
- 1/4 cup cornmeal
- 1 teaspoon kosher salt
- 1/2 teaspoon ground mustard
- Black pepper to taste
Directions
- Shred your cauliflower. You can either use a food processor on "shred" or you can use a knife and cutting board.
- Preheat your oven to 400 F and spray your muffin tin with oil or cooking spray.
- Combine all of the ingredients in a large bowl and mix together throughly.
- Using a measuring cup divide the mixture between the muffin cups. You then use the bottom of the measuring cup to press the mixture firmly down into the cups so they are about half full.
- Bake for 15 to 20 minutes or until the tots are a golden brown
